Even driving the paved roads, you face a very major road hazard. Under Oregon's open-range laws, a black cow at midnight has more right to the road than you do. If you hit a bovine, you (or your estate) bought it. Under the law, you have no beef.

When approaching livestock on or near the road, slow down. The younger the livestock, the more need to slow. The adults know about cars, and so do the yearlings. It is the little calves bolting straight for mom that are the most dangerous.
